Pumpkin Muffins with Candied Pecan Topping
Pumpkin flavored anything is my favorite! Its one of the best things about fall. As soon as the leaves begin to show their vibrant colors and that crispness is in the air, I am after those pumpkin flavored everythings! This is a simple pumpkin flavored muffin with a topping of finely chopped pecans, honey, brown sugar etc. to give it a pop of fall flavors.

- 3/4 Cup Granulated sugar
- 1/4 Cup Vegetable oil
- 2 Eggs
- 3/4 Cup Canned pumpkin
- 1/4 Cup Water
- 1 1/2 Cups Flour
- 3/4 Tsp. Baking powder
- 1/2 Tsp. Baking soda
- 1/4 Tsp. Ground cloves
- 1/4 Tsp. salt
- 1/4 Tsp. Ground nutmeg
Ingredients
For the Muffin

- Mix sugar, oil, eggs, water, and pumpkin.
- In a separate bowl, mix flour, baking soda, baking powder, spices, and salt.
- Combine the wet and dry ingredients.
- Pour into muffin cups about 2/3 full.
- For the topping, cream butter and brown sugar. Add in the flour.
- Stir in honey, cinnamon, and pecans.
- Spoon over the tops of the the batter in each muffin top.
- Bake at 400 for 15-20 minutes.
