Pumpkin Muffins with Candied Pecan Topping

Pumpkin flavored anything is my favorite! Its one of the best things about fall. As soon as the leaves begin to show their vibrant colors and that crispness is in the air, I am after those pumpkin flavored everythings! This is a simple pumpkin flavored muffin with a topping of finely chopped pecans, honey, brown sugar etc. to give it a pop of fall flavors.

Instructions
  1. Mix together the first 8 ingredients until smooth.
  2. Prepare the vanilla pudding according to package directions.
  3. Pour half of the bread batter into a greased loaf pan.
  4. Spoon 1/2 of the prepared vanilla pudding on top of the batter in the loaf pan, keeping it about 1 inch away from all edges. (See picture above).
  5. Gently spoon the remaining bread batter on top.
  6. Bake at 350 for 50-60 minutes.

Instructions
  1. Use enough apples to fill a 9x13 pan. Toss apples with the sugar, salt, lemon juice, and flour. Sprinkle with cinnamon.
  2. Stir together the topping ingredients.
  3. Sprinkle the topping over the apples in the 9x13 pan.
  4. Bake at 350 for 30-45 minutes or until apples are soft and topping is starting to brown.

Homemade Applesauce

Each Fall, I pick 20 lbs. of apples at a local apple orchard. That's a lot of apples for a family of 3. I manage to use every single one of those apples. My second go-to recipe is applesauce.

  1. Place apples in a large pot on your stove and sprinkles with lemon juice.
  2. Add remaining ingredients to pot and stir.
  3. Cover pot and bring to a simmer on medium heat.
  4. Allow apples to simmer on low stirring occasionally until softened and falling apart. May use a potato masher, I like leaving some chunks in mine.

Cookie Dough Rice Krispies Treats

I love cookie dough but every recipe I've tried that has cookie dough or cookie dough flavor is way too sweet. I decided to try my hand at making my own cookie dough flavored recipe and thought rice krispies treats would be a good place to start.

  1. Beat together 6 Tbsps butter, brown sugar, granulated sugar, milk, vanilla, flour, and chocolate chips until smooth.
  2. Add remaining 2 Tbsp. butter to a pot over low heat on your stove. Once butter is melted, add marshmallows stirring continuously until melted.
  3. Remove from heat and immediately stir in the rice krispies.
  4. Add cookie dough batter to the pot stirring well. Depending on how hot your pot is, your chocolate chips may begin to melt.
  5. Press mixture into a greased 9x13 pan. Spray the back of a spoon with nonstick cooking spray and use it to press the rice krispies into the pan and smooth them out.
  6. Because this recipe contains less marshmallow than a traditional recipe and because of the butter, I refrigerated them to help the treats hold together. Enjoy!
