Jack Chicken Spaghetti Casserole

If you love a pasta and just a hint of spice, this recipe is for you!  This is one of my husbands creations.  It is very, very easy to modify this recipe for little ones or for those who can’t tolerate spicy foods.  You simply substitute a different type of cheese right before baking.  I did this just a couple of days ago. I pulled aside a small amount of the ingredients and put them in a very small dish for my toddler and used shredded fiesta blend cheese instead of pepper jack. Her little dish baked right alongside our 9×13 so we could enjoy the same meal with different levels of spice. It worked perfectly!

Instructions
  1. Saute chicken, peppers, and onions in a covered pan until chicken is fully cooked.
  2. In another pan, saute mushrooms in a bit of butter.
  3. Cook spaghetti according to package instructions.
  4. Mix 1/2 of cheese and all other ingredients and place in a 9x13 pan.
  5. Bake covered at 350 for 30 minutes.
  6. Uncover and sprinkle with remaining cheese.
  7. Bake for another 15 minutes.
