This red bean salad is my grandpa’s favorite. We even named it after him. This recipe is so simple and is a great way to use your fresh garden tomatoes. I will always remember my grandparent’s large garden and helping them pick vegetables in the summer months. My grandpa would pop tomatoes in his mouth straight off the vine while I helped my grandma pick lettuce and green beans. This bean and tomato salad reminds me of those precious memories with them.
There are no set ingredient measurements for this recipe but I will tell you roughly what I do.
