As someone who loves to bake, I don’t generally get too experimental with bread recipes. An idea dawned on me a couple of weeks ago to try and make a bread with a cream center, kind of like filled donuts. I thought this would be great for a banana bread, banana bread filled with vanilla. I gave it shot by combining a banana bread recipe with instant vanilla pudding. I was worried that the center wouldn’t completely cook through, but it did. I could clearly tell where the bread ended and the pudding began. And WHA-LA, Vanilla Cream Banana Bread was born.
My husband LOVED it! So did my daughter, of course. She naturally has my sweet tooth. This recipe is so simple, so easy, and very yummy. Refrigerate it because of the pudding and to help firm it up. You could also use this sugar crust to make it even more delicious. Eat it as breakfast, snack, or dessert. Hope you love it as much as we did!
