I do not bake a lot, but when I do – it is a delight. Every time I do it, I realize again and again how easy it actually is. Despite what my brain makes me believe when I am thinking about trying out something new on the baking side of things. Yes sometimes we all have our fails – but do not despair. With some common sense and some guidance, you will also learn to be a good baker!

I make many variants of banana bread. This one is a sweet and slightly savory one. Savory banana bread, you ask? Yes, why not. That is what took my fancy that day so it happened. This bread will adapt well to any variations in the measurements – so make it sweeter if it pleases you. That particular day – I was feeling like something extra good for us, while being indulgent. Everything in this recipe is almost a super food, pardon the word- Tim hates it for being a cliche. As if all good food is not super food one way or the other. But for the sake of description, I sometimes use it.

Ingredients

  • 2 cups self rising flour + as needed

  • 4 very ripe bananas

  • 1/2 cup hazelnut meal

  • 1/2 tsp ginger powder

  • 1 – 1/2 cup of soy kefir or milk Kefir

  • 1/2 cup of dark chocolate chips

  • 1 tbs of cinnamon powder

  • 1/2 of nutmeg powder

  • 1 cup of walnuts

  • A pinch of salt. Pepper if desired.

  • 1 tbsp of flexseed meal

  • 1 tbsp of chia seeds

  • 1/2 tsp of chili flex if using

  • 3 tbsp of brown sugar

  • 2.5 tbsp of coconut oil

Directions

  • Mash the bananas well with a fork, add the flex seed meal and chia seeds in with the kefir milk to re hydrate. flex seed meal imitates the egg action in baking.
  • In a big bowl, add all your dry ingredients, chop the walnuts too.
  • Dump the wet ingredients in the dry and give it is a quick stir. You’d only need to stir it till everything is combined and no dry flour is visible. Take care not to over beat the batter.
  • line a baking pan with baking paper, pour in the batter, and garnish with more walnuts or slices of banana if desired.
  • Bake for 35-40 minutes or till the top is nice and cooked and a tooth pick inserted comes out clean.

Notes

  • Enjoy that beautiful baking aroma that will fill your home. Remember to take out the chili if this is not your game! Whichever way you may lean in that, be assured that this banana bread is indulgent, very indulgent with a nice banana flavor and extremely good for you! Swap to almonds if you do not have walnuts.
